Our restaurant is inspired by the historic “Bouillon parisien,” a concept that emerged in the late 19th century in Paris to provide nourishing and affordable meals to the workers of the city. The bouillon was first introduced by Pierre-Louis Duval, a butcher who, in 1855, began selling simple yet satisfying meals made of meat and broth to the workers in the bustling Les Halles district. This concept quickly gained popularity due to its simplicity: inexpensive, hearty food served quickly. By the early 20th century, these establishments had become the first restaurant chain in Paris, with some 250 locations spread across the City of Light.
The traditional bouillons were more than just places to eat; they were institutions where people from all walks of life gathered. Blue and white-collar workers could store their napkins in numbered lockers, and waiters would jot down orders and bills on paper tablecloths. The decor of these restaurants often included well-worn wood and other elements that reflected the everyday life of their patrons.
As the Art Nouveau movement swept through Europe, particularly influenced by Paris’ hosting of the 1878, 1889, and 1900 World Fairs, it began to shape the decor, furniture, and architecture of bouillons. These establishments embraced the carved wood, glistening ceramics, colorful mirrors, and glass paintings typical of the Belle Époque, creating interiors that were as much a feast for the eyes as the food was for the palate.
